Benedict's restaurant serves dishes such as Shellfish Bisque and Pot-roasted Jump of Lamb, and the Abbey Bar and Bistro, converted from the old church and featuring a ceiling rising 60-feet high, serves sandwiches and light snacks. The bar also has weekly theme nights. Breakfast is complimentary to guests.
The hotel has a range of meeting rooms and conference suites, hosting up to 350 persons.
Guestrooms.
The 49 guestrooms at the Carlton Abbey feature teak wood panelling and contemporary decor with rust-coloured moire-effect fabrics. Amenities include satellite television, direct- dial phones, Internet access, and tea/coffee makers. Bathrooms include designer toiletries and hair dryers.
Expert Tip. The Irish National Stud farm just south of Kildare incorporates ornamental Japanese gardens reflecting the beliefs of its founder, Colonel Hall-Walker. His inspired, if eccentric, views on horse- breeding were highly successful.
